Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup walnuts or pecans, chopped
  • 1/2 cup margarine or butter
  • 1 cup white sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 cup apples, peeled, cored, and grated
  • dash of cinnamon

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Mix flour, baking powder, baking soda, salt, and chopped nuts in a large bowl.
  3. In a separate bowl, beat margarine or butter, sugar, and one egg until smooth.
  4. Add the second egg and beat well.
  5. Stir in vanilla extract.
  6. Fold in grated apples and a dash of cinnamon.
  7. Pour the batter into a greased loaf pan.
  8. Bake for 50 to 60 minutes or until a toothpick inserted into the center comes out clean.
