Ingredients

  • 16 oz. frozen cod or haddock fillets
  • 1 Tbsp. salad oil
  • 1 medium onion, sliced
  • 28 oz. can tomatoes
  • 2 medium potatoes, peeled and diced
  • 1 1/2 tsp. salt
  • 1/2 tsp. basil
  • 1/4 tsp. pepper
  • 1/4 tsp. sugar
  • 10 oz. frozen mixed vegetables

Instructions

  1. Remove frozen fish fillets from freezer, let stand at room temperature 15 minutes to thaw slightly.
  2. In a 4-quart saucepan, heat hot salad oil over medium heat.
  3. Cook onion until tender.
  4. Stir in tomatoes with their liquid, potatoes, salt, basil, pepper, and sugar.
  5. Bring to a boil over high heat.
  6. Reduce heat to low, cover, and simmer for 10 minutes, stirring occasionally.
  7. Meanwhile, with a sharp knife, cut fish fillets into bite-size chunks.
  8. Add fish and frozen vegetables to the tomato mixture.
  9. Heat to boiling over high heat.
  10. Reduce heat to low, cover, and simmer for 5 minutes or until fish is tender.
