Ingredients

  • 3 eggs
  • 1/3 c. mushrooms, chopped
  • 1/4 c. green onions, chopped
  • 1/2 c. tomato
  • 2 Tbsp. mayonnaise
  • cheese, grated
  • salsa (hot or mild; add to taste)

Instructions

  1. You can add shrimp, bacon or almost anything you like to the omelet.
