Ingredients

  • 2 lb. frozen cod fillets
  • 1/2 lb. butter
  • 1/2 c. oil
  • 1/3 c. onion, chopped
  • 1 clove garlic, chopped
  • 1 1/2 c. canned tomatoes with juice
  • 1/2 tsp. cinnamon
  • 1/2 tsp. cloves

Instructions

  1. In a large 3-quart heavy saucepan, place butter and oil.
  2. Heat until butter melts.
  3. Add chopped onion, chopped garlic, canned tomatoes with juice, cinnamon, and cloves. Bring to a boil.
  4. Reduce heat and add partially thawed cod fillets cut into 1 to 1 1/2-inch cubes.
  5. Bring to a boil; reduce heat and simmer 1 1/2 to 2 hours, stirring occasionally.
  6. Serve over hot polenta or potatoes.
