Ingredients

  • 2 - 2 1/2 lb. salted cod (boneless)
  • 1/2 lb. green olives
  • 1 bunch leeks
  • 1 tsp. capers
  • 2 oz. flat fillets of anchovies
  • Tomato sauce

Instructions

  1. Soak the salted cod for 24 hours, changing the water several times.
  2. Wring out the baccala and pat dry with paper towels.
  3. Cut the cod into 3 to 4 inch pieces.
  4. Cover the bottom of a large baking dish with prepared tomato sauce.
  5. Line the leeks over the sauce, then place the fish on top.
  6. Add the green olives, capers, and anchovies over the fish.
  7. Pour the tomato sauce over the ingredients.
  8. Cover the baking dish tightly.
  9. Bake at 350°F (175°C) for 35 to 45 minutes, until the fish is soft and flaky.
