Baccala(Salted Cod)

- Soak the salted cod for 24 hours, changing the water several times.
- Wring out the baccala and pat dry with paper towels.
- Cut the cod into 3 to 4 inch pieces.
- Cover the bottom of a large baking dish with prepared tomato sauce.
- Line the leeks over the sauce, then place the fish on top.
- Add the green olives, capers, and anchovies over the fish.
- Pour the tomato sauce over the ingredients.
- Cover the baking dish tightly.
- Bake at 350°F (175°C) for 35 to 45 minutes, until the fish is soft and flaky.
