A quick, cheesy cauliflower bake with crispy bread crumbs, perfect for a satisfying solo dinner or a simple side dish bursting with flavor.

Ingredients

  • 1 large head of cauliflower
  • salt to taste
  • 1 Tbsp butter
  • 1/2 cup bread crumbs
  • 2 packages Mozzarella cheese (8 oz each, low fat slices)
  • pepper to taste
  • 1 Tbsp oil or Pam spray

Instructions

  1. Cook or steam the cauliflower and cut into small florets.
  2. In a pie dish, spray with oil or butter and lay slices of cheese to cover the bottom as a crust.
  3. Put the cooked, drained cauliflower in the dish.
  4. Add butter, salt, and pepper to taste.
  5. Place the second package of cheese on top, covering the cauliflower like a crust.
  6. Sprinkle bread crumbs on top of the cheese.
  7. Bake in a 400°F oven for 20 minutes, until the cheese begins to brown.
  8. Remove from oven and let stand for 5 minutes before serving.
