Ingredients

  • 1 3/4 cups all-purpose flour
  • 1/2 cup shredded sharp cheese
  • 1/4 cup sugar
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1 egg
  • 3/4 cup milk
  • 1/3 cup cooking oil
  • 6 strips bacon

Instructions

  1. Spray muffin pan with cooking spray or Pam.
  2. In a large bowl, mix together the all-purpose flour, shredded sharp cheese, sugar, baking powder, and salt.
  3. In a small bowl, beat the egg, then add the milk and cooking oil, mixing well.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined. The batter will be lumpy.
  5. Fold in the crumbled cooked bacon.
  6. Fill the muffin cups evenly with the batter, level with the top of the pan.
  7. Bake at 400°F (200°C) for 20 to 25 minutes, or until the muffins are golden brown.
  8. Remove from oven and serve warm.
