Ingredients

  • 8 to 10 medium potatoes
  • 1/2 cup finely chopped onion
  • 1 pound processed American cheese, cubed
  • 1 cup mayonnaise
  • 1/2 pound bacon, cooked and crumbled
  • 3/4 cup sliced black olives
  • chopped fresh parsley (optional)
  • paprika (optional)

Instructions

  1. Peel the potatoes, place in a saucepan, and cover with water.
  2. Cook until tender but firm, then drain and cube.
  3. In a bowl, mix the cubed potatoes, chopped onion, cubed processed American cheese, and mayonnaise.
  4. Transfer the mixture to an ungreased 13 x 9 x 2-inch baking dish.
  5. Sprinkle the top with cooked, crumbled bacon and sliced black olives.
  6. Cover and bake at 350°F (175°C) for 30 minutes or until heated through.
  7. If desired, sprinkle with chopped fresh parsley and paprika before serving.
