Ingredients

  • 1 lb bacon, cooked and cut into pieces
  • 1 1/2 cups self-rising flour
  • 1/2 cup butter, room temperature
  • 1 egg, beaten
  • 1/2 cup milk
  • 1 cup grated Cheddar cheese
  • 1/2 cup chopped onions

Instructions

  1. Preheat oven to 400°F.
  2. In a large bowl, mix together self-rising flour, butter, milk, and beaten egg.
  3. Add cooked bacon pieces, grated Cheddar cheese, and chopped onions if desired.
  4. If batter seems too thick, add a little more milk to loosen it.
  5. Spray muffin pan with non-stick spray or grease it.
  6. Fill each muffin cup about 3/4 full with batter.
  7. Bake for 15 to 20 minutes until golden brown.
