A savory breakfast casserole with crispy bacon, sautéed mushrooms and onions, melted Cheddar, and fluffy bread, perfect for entertaining guests or a hearty weekend brunch.

Ingredients

  • 1/2 lb bacon
  • 1 medium onion, chopped
  • 1 cup canned mushroom stems and pieces
  • 6 slices bread
  • 1 cup shredded Cheddar cheese
  • 4 eggs, beaten
  • 2 cups milk
  • 1/2 teaspoon salt

Instructions

  1. Cook bacon until crisp and drain on absorbent paper.
  2. Reserve 4 tablespoons of bacon drippings.
  3. Use 1 tablespoon of drippings to grease the bottom of a 9 x 13-inch baking dish.
  4. Cook chopped onion and canned mushroom stems and pieces in the remaining drippings until tender.
  5. Arrange slices of bread in the prepared dish.
  6. Top the bread with the cooked mushroom mixture, shredded Cheddar cheese, and crumbled bacon.
  7. In a bowl, beat the eggs, then mix in milk and salt.
  8. Pour the egg mixture over the layered ingredients in the dish.
  9. Refrigerate overnight to allow flavors to meld.
  10. Bake in a 350°F oven for 35 minutes or until puffed and golden brown.
