Ingredients

  • 2 lb. red snapper fillet or sea bass
  • 3 oz. salt pork
  • 3 medium onions
  • 1 stalk celery
  • 1 stick butter or margarine
  • 2 Tbsp. Wesson oil
  • bay leaves
  • basil
  • oregano
  • cumin powder
  • crushed red pepper

Instructions

  1. Cut salt pork into tiny pieces.
  2. Use Wesson oil in a small skillet to brown the salt pork.
  3. Add the browned salt pork and drippings to 2 quarts of boiling water in a soup pot.
  4. Chop onions and celery and add to the pot.
  5. Season with butter or margarine, bay leaves, basil, oregano, cumin powder, and crushed red pepper to make it spicy.
  6. Let the soup boil until the vegetables and salt pork are cooked.
  7. Cut fish fillet into small chunks.
  8. Add fish to the pot and let it boil for 10 to 12 minutes.
  9. Serve over steamed rice.
