Ingredients

  • 1/2 cup butter, room temperature
  • 1 cup mushrooms, thinly sliced
  • 3 tablespoons green onions, finely chopped
  • 1 tablespoon garlic, finely chopped
  • 1 pound bay scallops
  • 1/2 cup chopped parsley, fresh
  • 1/2 cup bread crumbs
  • Salt and pepper to taste

Instructions

  1. Melt butter in a pan and add sliced mushrooms.
  2. Cook, stirring, until mushrooms are wilted.
  3. Add chopped green onions and garlic; cook until transparent.
  4. Transfer the mixture to a bowl; add 2 tablespoons of butter, chopped parsley, bread crumbs, salt, and pepper.
  5. Spoon the mixture into a baking dish.
  6. Drizzle the remaining butter on top.
  7. Bake in a 450°F oven for 10 minutes.
  8. Broil for 1 minute to brown the top.
  9. Do not overcook.
