Ingredients

  • 6 eggs
  • 1 Tbsp. flour
  • 1/4 tsp. salt
  • 1/4 tsp. pepper
  • 1 (4 oz.) can green chilies (whole)
  • 1/2 lb. Jack cheese, sliced

Instructions

  1. Separate the eggs. Beat the egg whites until stiff.
  2. Mix the egg yolks with flour, salt, and pepper.
  3. Fold the beaten egg whites into the yolk mixture.
  4. Pour half of the batter into a greased 13 x 9-inch baking dish.
  5. Remove seeds from the green chilies and spread the chilies over the batter.
  6. Cover the chilies with slices of Jack cheese.
  7. Pour the remaining batter over the cheese and chilies.
  8. Bake in a 325°F oven for 25 minutes.
