A warm, flavorful baked fruit dish with curry spices, combining peaches, cherries, pineapple, and mandarins for a delightful dessert or side that appeals to fruit lovers.

Ingredients

  • 20 oz. can peaches
  • 20 oz. can bing cherries
  • 20 oz. can pineapple chunks
  • 11 oz. can mandarin oranges
  • 2/3 cup light brown sugar
  • 2 tsp. curry powder
  • Juice of 1 lemon
  • 1/4 cup margarine

Instructions

  1. Drain fruits well in a colander until all juice has run off, 1 to 2 hours.
  2. Prepare a shallow casserole (8 x 12 inches or similar size) by greasing it with margarine.
  3. Add the drained fruit to the casserole.
  4. In a small bowl, mix light brown sugar and curry powder, then cover the fruit with this mixture.
  5. Sprinkle the lemon juice over the top and dot with margarine.
  6. Cover the casserole and bake in the oven at 300°F (150°C) for 1 hour.
