Baked Egg Cups combine crispy bacon, cheesy cracker crumbs, and perfectly cooked eggs for a savory breakfast. Ideal for brunch or a hearty start to the day.

Ingredients

  • 12 slices bacon
  • 2 cups crushed cheese-flavored crackers
  • 4 tablespoons melted butter or margarine
  • 12 eggs
  • salt

Instructions

  1. Cook bacon until done, but not crisp.
  2. Generously grease 12 muffin or popover cups.
  3. Line the sides of each cup with bacon.
  4. Combine crushed cheese-flavored crackers with melted butter.
  5. Place 1 tablespoon of cracker mixture in the bottom of each cup.
  6. Carefully place 1 raw egg in each cup on top of the cracker mixture.
  7. Season each egg with salt and pepper.
  8. Sprinkle remaining cracker mixture over the eggs.
  9. Bake at 350°F for 15 minutes or until eggs reach your desired doneness.
