Ingredients

  • 1 whole salmon (2 1/2 to 3 lb.)
  • 1/2 to 3/4 block margarine
  • 1 onion, minced
  • 1/2 lb. fresh mushrooms, sliced
  • 1/2 cup fresh lemon juice

Instructions

  1. Split the fish in half lengthwise and salt and pepper to taste. Place in a baking pan.
  2. Saute margarine, minced onion, and sliced mushrooms.
  3. Add fresh lemon juice to the sautéed mixture.
  4. Pour the sauce over the salmon.
  5. Bake, uncovered, at 350°F (175°C) for 30 to 35 minutes.
