Ingredients

  • 3 lb. fryer chicken, cut up
  • 1 can mushroom soup
  • 1 Tbsp. grated lemon rind
  • 2 Tbsp. lemon juice
  • 1/2 tsp. salt
  • 1/4 tsp. basil
  • 1/4 tsp. oregano

Instructions

  1. Combine mushroom soup, grated lemon rind, lemon juice, salt, basil, and oregano in a bowl.
  2. Pour the mixture over the cut-up chicken laid out in a baking dish.
  3. Bake uncovered at 325°F (163°C) for 1 hour and 15 minutes.
  4. Serve the baked herb chicken over rice.
