Ingredients

  • 1 package macaroni cheese dinner
  • 2 Tbsp margarine
  • 1/2 cup chopped onion
  • 1 (1 lb) can tomatoes
  • 1 Tbsp parsley flakes
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 4 slices (4 oz) sharp Cheddar cheese

Instructions

  1. Cook macaroni following package directions; drain and reserve for later use.
  2. In a large skillet, sauté onion in margarine just until tender.
  3. Add tomatoes, parsley flakes, salt, and pepper; simmer, uncovered, for 5 minutes, stirring occasionally.
  4. Remove from heat.
  5. Stir in contents of cheese packet.
  6. Heat slowly, stirring constantly, until mixture is thoroughly blended.
  7. Gently stir in reserved macaroni.
  8. Pour into a greased, shallow 2-quart baking dish.
  9. Bake in a preheated 350°F oven for 20 minutes; remove from oven.
  10. Top with cheese slices.
  11. Return casserole to oven for 5 minutes, or until cheese is melted.
  12. Serve immediately.
