Baked Northern Beans

Ingredients

  • beans
  • 1/2 tsp. baking soda
  • 3 Tbsp. molasses
  • 1/4 tsp. dry mustard
  • 1/2 cup brown sugar
  • 1 1/2 tsp. pepper
  • bacon
  • salt

Instructions

  1. Soak the beans overnight in water.
  2. Drain and rinse the soaked beans.
  3. Cover the beans with water and boil until skins come off when blown on.
  4. Add baking soda to the boiling beans.
  5. Let the beans bubble, then drain and rinse.
  6. Place the beans in a baking dish.
  7. Add molasses, dry mustard, brown sugar, pepper, and salt to taste.
  8. Cover the top of the dish with bacon slices.
  9. Bake at 400°F until it boils.
  10. Reduce oven temperature to 325°F and bake for 1 hour.
  11. Finish baking for 2 more hours at 300°F.
