Instructions
- Soak the beans overnight in water.
- Drain and rinse the soaked beans.
- Cover the beans with water and boil until skins come off when blown on.
- Add baking soda to the boiling beans.
- Let the beans bubble, then drain and rinse.
- Place the beans in a baking dish.
- Add molasses, dry mustard, brown sugar, pepper, and salt to taste.
- Cover the top of the dish with bacon slices.
- Bake at 400°F until it boils.
- Reduce oven temperature to 325°F and bake for 1 hour.
- Finish baking for 2 more hours at 300°F.
