Ingredients

  • 1/2 cup chopped green onion with tops
  • 5 tablespoons butter, melted
  • 1 (8 1/2 oz.) package corn muffin mix
  • 1 cup chopped cooked ham
  • 2 eggs, slightly beaten
  • 2/3 cup milk
  • 1/2 teaspoon prepared mustard
  • 1 1/2 cups shredded Cheddar cheese
  • 1 tablespoon sesame seed

Instructions

  1. Saute chopped green onions in 1 tablespoon melted butter for 5 minutes.
  2. Combine corn muffin mix, chopped cooked ham, 2 tablespoons melted butter, eggs, milk, prepared mustard, and 1 1/2 cups shredded Cheddar cheese in a mixing bowl.
  3. Add sautéed onions to the mixture and stir just until blended.
  4. Pour the batter into a buttered 1 1/2-quart casserole dish.
  5. Top with remaining 1/2 cup shredded Cheddar cheese, 2 tablespoons melted butter, and sprinkle with sesame seed.
  6. Bake in a 375°F oven for 35 to 40 minutes until golden and set.
  7. Cut into wedges and serve hot, optionally with Mushroom Sauce.
