Baked Pepper-Cheese Squash

Ingredients

  • 2 lb. fresh summer squash
  • 8 slices bacon
  • 1 large onion
  • 1 roll (brick) jalapeno cheese
  • bread crumbs

Instructions

  1. Boil the squash until tender.
  2. Fry the bacon until crisp and remove from the pan.
  3. Brown the onion rings in some of the bacon drippings.
  4. Crumble the bacon.
  5. Layer half of the cooked squash, bacon, onion rings, and cheese in a 9 x 9-inch shallow baking dish.
  6. Repeat the layering with the remaining ingredients.
  7. Sprinkle bread crumbs on top.
  8. Bake in a 325°F oven for 40 minutes.
