Ingredients

  • 4 cups water
  • 1/2 cup butter or margarine
  • 2 cups milk
  • 1 1/2 teaspoons salt
  • 5 cups instant mashed potatoes
  • 1 cup sour cream
  • 1 (8 oz) cream cheese
  • 1 tablespoon garlic powder
  • 4 tablespoons chopped chives
  • 1/2 cup grated Cheddar cheese
  • paprika (optional)

Instructions

  1. Bring water to a boil in a large saucepan.
  2. Add butter, salt, and milk to the boiling water.
  3. Remove from heat.
  4. Add instant mashed potatoes, sour cream, cream cheese, garlic powder, and chopped chives.
  5. Mix well until smooth and creamy.
  6. Fill aluminum foil potato shells with the mashed potato mixture.
  7. Sprinkle grated Cheddar cheese or paprika on top of each shell, according to preference.
  8. Place the filled shells on a cookie sheet.
  9. Bake in an oven preheated to 350°F (175°C) for 20 to 25 minutes.
