- About 1 1/2 hours before serving, bake potatoes 50 to 60 minutes in a 450°F oven.
- Meanwhile, cook spinach as directed on label; drain.
- When potatoes are fork tender, cut lengthwise in half and scoop out pulp.
- With electric mixer, at medium speed, combine potato pulp, egg yolks, salt, pepper, onion powder, and nutmeg.
- Beat until very smooth.
- Stir in drained spinach.
- Heap potato mixture back into shells.
- Cut cheese into eight strips, placing one on each potato.
- Place on a cookie sheet and return to 450°F oven for 8 to 10 minutes or until cheese is melted and potatoes are hot.
