Ingredients

  • 2 1/8 cups dry soybeans
  • 3 1/2 cups tomatoes (from one No. 2 1/2 can)
  • 1 cup sauteed onions
  • 1/4 cup oil
  • 6 1/2 cups water
  • 1 to 2 tablespoons blackstrap molasses
  • 1/4 cup brown sugar
  • 2 teaspoons salt
  • 1/4 cup lemon juice
  • 1 teaspoon sweet basil
  • 1/2 cup tomato paste

Instructions

  1. Pressure cook the soybeans in water for 1 hour.
  2. Drain the juice from the tomatoes and add the tomatoes to the sauteed onions in a heavy skillet.
  3. Simmer the tomato and onion mixture.
  4. Cut the tomatoes into small pieces and add them to the juice.
  5. Add brown sugar, oil, and salt to the mixture.
  6. Mix well to combine all ingredients.
  7. Add the cooked soybeans to the tomato mixture.
  8. Transfer the mixture to a baking dish and bake at 350°F until the juice is thickened.
  9. Remove from oven and add lemon juice and sweet basil.
  10. Stir in 1/2 can of plain tomato paste before serving.
