Ingredients

  • 1/2 cup shortening
  • 1 1/4 cups sugar
  • 2 egg yolks
  • 1 teaspoon lemon extract
  • 1/2 teaspoon vanilla extract
  • 1 1/2 cups shredded carrots
  • 1 1/2 cups flour
  • 3 tablespoons baking powder
  • 3/4 teaspoon salt
  • 1/4 cup milk
  • 2 egg whites
  • Sunshine Sauce

Instructions

  1. Cream shortening and sugar in a mixer bowl until light and fluffy.
  2. Beat in egg yolks, lemon extract, vanilla extract, and shredded carrots.
  3. Mix flour, baking powder, and salt in a separate bowl.
  4. Add the dry ingredients to the carrot mixture alternately with milk, mixing well after each addition.
  5. Beat egg whites until stiff peaks form.
  6. Gently fold the egg whites into the batter.
  7. Pour the batter into a greased 9-inch square baking dish.
  8. Bake at 350°F (175°C) for 50 to 55 minutes or until lightly browned.
  9. Serve warm topped with Sunshine Sauce.
