Balsamic Turkey

Tender turkey cutlets are coated in flavorful flour, pan-fried, then simmered with sweet red peppers, garlic, basil, and balsamic vinegar for a quick, savory dish.

Ingredients

  • 2 Tbsp. flour
  • 1/8 tsp. black pepper
  • 4 turkey breasts cutlets (about 1 lb. each)
  • 3 Tbsp. olive oil
  • 2 large red peppers
  • 2 cloves garlic
  • 1 tsp. dried basil
  • 2 Tbsp. balsamic vinegar

Instructions

  1. Combine flour and black pepper; coat turkey cutlets with the mixture and shake off excess.
  2. Heat 2 tablespoons of olive oil in a heavy skillet. Add turkey cutlets and brown on each side.
  3. Remove turkey to a warm platter.
  4. Add remaining oil along with sliced red peppers and minced garlic to the skillet.
  5. Reduce heat to low and cook until peppers are tender.
  6. Add dried basil and balsamic vinegar to the skillet.
  7. Return turkey to the skillet and cook over moderate heat for 2 minutes longer until turkey is done.
