Ingredients

  • 3 cups sifted flour
  • 1 1/4 cups sugar
  • 3 eggs
  • 1 1/2 cups vegetable oil
  • 1 teaspoon soda
  • 1 teaspoon salt
  • 1 teaspoon cinnamon
  • 1 cup nuts, chopped fine
  • 2 cups mashed bananas
  • 1 (8 oz.) can crushed pineapple, drained
  • 2 teaspoons vanilla

Instructions

  1. Combine the sifted flour, sugar, soda, salt, and cinnamon in a bowl. Add the chopped nuts and set aside.
  2. In a separate bowl, mix together the beaten eggs, vegetable oil, mashed bananas, crushed pineapple, and vanilla extract.
  3. Pour the wet mixture into the dry ingredients and stir until well combined.
  4. Divide the batter evenly into two greased and floured 9 x 5 x 3-inch loaf pans.
  5. Bake at 325°F (160°C) for approximately 1 hour, or until a toothpick inserted into the center comes out clean.
  6. Allow the bread to cool before removing from the pans. The bread freezes well for storage.
