Ingredients

  • 1 1/2 cups flour
  • 1 cup sugar
  • 1 teaspoon soda
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 2/3 cup salad oil
  • 2 eggs
  • 1 cup shredded carrots
  • 1/2 cup crushed pineapple
  • 1 teaspoon vanilla
  • 1/2 cup nuts

Instructions

  1. Sift together into a large mixing bowl the flour, sugar, baking powder, soda, cinnamon, and salt.
  2. Add salad oil, eggs, shredded carrots, crushed pineapple, vanilla, and nuts to the dry ingredients.
  3. Beat until well mixed.
  4. Pour the batter into a greased and floured 9 x 9 x 2-inch pan.
  5. Bake at 350°F (175°C) for 35 minutes until golden and a toothpick inserted into the center comes out clean.
