Ingredients

  • 1/3 cup shortening
  • 2/3 cup sugar
  • 2 eggs
  • 1 3/4 cups all-purpose flour
  • 2 3/4 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup mashed ripe bananas

Instructions

  1. Beat shortening until creamy, about 1 minute at medium speed on mixer.
  2. Blend in sugar until light and fluffy.
  3. Add eggs; beat well.
  4. Sift dry ingredients; add alternately with mashed bananas.
  5. Blend well.
  6. Grease the bottom of a 4 1/2 x 8 1/2 x 3-inch loaf pan.
  7. Turn batter into the prepared pan.
  8. Bake in a 350°F oven for 60 minutes.
  9. Cool in pan for 10 minutes.
  10. Turn onto a rack to cool completely.
