Ingredients

  • 1 1/2 cups sifted flour
  • 1 1/2 teaspoons double-acting baking powder
  • 3/4 cup cold water
  • 3 eggs separated
  • lemon juice
  • 1 cup heavy cream whipped and sweetened
  • 1/2 teaspoon salt
  • grated rind of 2 lemons
  • 1 cup plus 2 tablespoons sugar

Instructions

  1. Sift together the dry ingredients three times.
  2. Add water and lemon rind to egg yolks and beat until tripled in volume.
  3. Gradually add 1 cup plus 2 tablespoons sugar, beating after each addition.
  4. Add dry ingredients gradually, beating slowly with a beater.
  5. Beat egg whites until foamy.
  6. Add lemon juice and 3 tablespoons sugar to egg whites and beat until soft peaks form.
  7. Fold the beaten egg whites into the flour mixture.
  8. Pour the batter into 2 ungreased cake pans.
  9. Bake at 350°F (175°C) for 25 to 30 minutes.
  10. Slice bananas and layer between the cooled cake layers.
  11. Garnish the top with whipped cream and banana slices.
