Ingredients

  • 2 3/4 cups flour
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 1/4 teaspoon ground cloves
  • 1 1/2 teaspoons cinnamon
  • 1/2 cup chopped pecans (optional)
  • 3/4 teaspoon nutmeg
  • 2/3 cup shortening
  • 1 1/3 cups sugar
  • 2 eggs
  • 1 2/3 cups mashed bananas
  • 2 teaspoons vanilla extract

Instructions

  1. Sift together flour, baking powder, salt, ground cloves, cinnamon, and nutmeg.
  2. Cream shortening and sugar until light and fluffy.
  3. Add beaten eggs, mashed bananas, and vanilla extract; mix well.
  4. Add dry ingredients to the wet mixture; mix for 2 minutes at medium speed.
  5. Pour batter into two greased and floured 8-inch cake pans.
  6. Bake at 350°F (175°C) for 30 to 35 minutes, or until a toothpick inserted into the center comes out clean.
  7. Alternatively, use a greased and floured tube pan and bake for about 1 hour.
