Ingredients

  • 12 sheets of Filo dough
  • 8 oz. crumbled feta cheese
  • 5 eggs
  • 1 stick of butter
  • 1 1/2 cups seltzer soda
  • 1/2 cup sugar

Instructions

  1. Preheat oven to 375°F and grease a 9x13 inch pan.
  2. In a small bowl, mix crumbled feta cheese and four eggs together.
  3. Place the first sheet of filo dough at the bottom of the pan and brush with one tablespoon of melted butter.
  4. Repeat with three more filo sheets, brushing each with melted butter.
  5. On the fourth sheet, spread half of the egg and feta mixture.
  6. Place another sheet of filo dough on top, brush with butter, and repeat with three more sheets.
  7. Spread the remaining egg and feta mixture over the layered filo.
  8. Cover with four more sheets of filo dough, brushed with butter.
  9. Carefully cut squares into the assembled layers.
  10. Pour any remaining melted butter over the top.
  11. Mix one egg with seltzer soda and pour evenly over the assembled layers.
  12. Bake in the oven for 20 to 25 minutes or until golden brown.
  13. Remove from the oven, sprinkle with cold water, cover with a paper towel and dish towel, and let stand for 10 minutes.
  14. Sprinkle with sugar and serve warm.
