Ingredients

  • 1 (13 x 9-inch) spice cake
  • 1/4 cup butter
  • 1/2 cup light brown sugar
  • 1/2 cup chopped walnuts
  • 1 can drained apricot halves
  • 1 teaspoon lemon juice
  • 1 cup heavy cream whipped or Cool Whip

Instructions

  1. Line a 9 x 13-inch pan with foil.
  2. Dot butter evenly over the foil.
  3. Sprinkle evenly with light brown sugar, then with chopped walnuts.
  4. Arrange drained apricot halves in the bottom of the pan and sprinkle with lemon juice.
  5. Place the baked spice cake on top of the apricots and cover with foil.
