Ingredients

  • 1 hog head or 5 lb. Boston butt with fat and skin removed
  • 1 to 2 lb. liver
  • 3 lb. lean ground hamburger
  • 2 lb. onions
  • 8 oz. jar mustard
  • 2 qt. tomatoes
  • 28 oz. ketchup
  • 8 oz. Worcestershire sauce
  • 2 lb. potatoes
  • 1 cup vinegar
  • salt and pepper to taste

Instructions

  1. Cook all meats separately; only brown the hamburger.
  2. Remove all fat from the cooked meats and keep the liquid.
  3. Use the liquid to thin the hash if it becomes too thick during cooking.
  4. Grind the cooked meats, tomatoes, potatoes, and onions.
  5. Mix all ground ingredients with the seasonings and sauces.
  6. Bring the mixture to a boil, then cook very slowly until done, stirring constantly with a wooden paddle.
  7. Be careful as the mixture can stick and burn.
  8. Add the reserved liquid from cooked meats to thin the hash as desired.
  9. Serve over rice. The dish can be frozen for later use.
