Ingredients

  • 1/2 cup butter
  • 2 cloves garlic, minced
  • 1/2 cup dry white wine
  • 3 tablespoons chopped fresh herbs, such as chives, thyme, chervil, basil, and parsley
  • 2 teaspoons grated lemon rind
  • 1 whole chinook (king) salmon, butterflied with skin intact

Instructions

  1. Melt 1 tablespoon of butter over low heat in a small, heavy saucepan.
  2. Add the garlic and cook briefly.
  3. Stir in the wine and cook until reduced to 1/2 cup.
  4. Add the remaining butter and stir until melted.
  5. Stir in the chopped herbs and lemon rind.
  6. Set aside the sauce.
  7. Butterfly the whole Chinook salmon with skin intact.
  8. Preheat the grill to medium-high heat.
  9. Grill the salmon, skin side down, until cooked through, about 8-10 minutes per side.
  10. Serve the grilled salmon with the prepared herb butter sauce.
