Ingredients

  • 2 onions, chopped
  • 1 fresh hot pepper, sliced
  • 2 Tbsp. butter
  • paprika
  • 2 (1 lb.) cans stewed tomatoes
  • 1/2 c. uncooked long grain rice
  • salt

Instructions

  1. Brown chopped onions and sliced hot pepper in butter.
  2. Add paprika to taste.
  3. Briefly process stewed tomatoes in a blender.
  4. Add processed tomatoes, uncooked rice, salt, and pepper to the onion mixture.
  5. Cover and cook until rice is tender, about 45 minutes, adding water if necessary.
  6. Remove pepper slices before serving.
