A hearty Barcelona beef stew featuring tender rump steak, smoky bacon, tomatoes, and aromatic herbs, perfect for comforting family dinners or gatherings.

Ingredients

  • 3 lb rump steak
  • 6 slices bacon
  • 1/2 tsp pepper
  • 3 medium onions
  • 1 cup uncooked rice
  • 2 cups beef stock
  • 1 finely crushed bay leaf
  • 1/2 tsp thyme
  • 2 crushed garlic cloves
  • 1 1/2 cups peeled and chopped tomatoes

Instructions

  1. Cube the rump steak into 1-inch squares.
  2. Cook the bacon slices in a skillet until crisp, then drain and transfer to a casserole dish.
  3. Brown the steak in the bacon drippings until browned.
  4. Add salt and pepper, then put the meat in the bacon dish.
  5. Saute the sliced onions for 5 minutes, then add to the meat.
  6. In the remaining fat, brown the uncooked rice, then set aside.
  7. Add the bay leaf, thyme, and crushed garlic to the meat.
  8. Pour in the beef stock and add the peeled and chopped tomatoes.
  9. Cover the dish and bake at 325°F for 1 hour.
  10. Cook the rice separately and add it to the dish.
  11. Cook for an additional 90 minutes, then serve.
