Barley Chicken
Ingredients
- 2 whole chicken breasts, split for 4 servings and cooked ⓘ
- 1 c. barley (regular or quick cooking) ⓘ
- 2 Tbsp. butter or margarine ⓘ
- 2 cans French onion soup ⓘ
- 1 (8 oz.) pkg. (or less) fresh mushrooms, sliced
- 1/2 c. golden raisins (optional) ⓘ
- chopped fresh parsley (optional) ⓘ
- 1 can water chestnuts, sliced (optional) ⓘ
Instructions
- Cook chicken breasts in water to cover.
- Bone and cut meat into bite-size pieces.
- Reserve broth for later use.
- Brown barley in butter or margarine.
- Add French onion soup and sliced mushrooms.
- Cover and cook on stove top at low heat until barley has absorbed liquid (about 30 minutes for quick-cooking barley; longer for regular barley).
