Barley Chicken

Ingredients

  • 2 whole chicken breasts, split for 4 servings and cooked
  • 1 c. barley (regular or quick cooking)
  • 2 Tbsp. butter or margarine
  • 2 cans French onion soup
  • 1 (8 oz.) pkg. (or less) fresh mushrooms, sliced
  • 1/2 c. golden raisins (optional)
  • chopped fresh parsley (optional)
  • 1 can water chestnuts, sliced (optional)

Instructions

  1. Cook chicken breasts in water to cover.
  2. Bone and cut meat into bite-size pieces.
  3. Reserve broth for later use.
  4. Brown barley in butter or margarine.
  5. Add French onion soup and sliced mushrooms.
  6. Cover and cook on stove top at low heat until barley has absorbed liquid (about 30 minutes for quick-cooking barley; longer for regular barley).
