Ingredients

  • 2 lb. lean ground beef
  • 2 garlic cloves, crushed
  • 1 tsp. oregano
  • 2 (15 oz.) cans tomatoes
  • 3 to 5 Tbsp. chili powder
  • 3 Tbsp. all-purpose flour
  • 1 (16 oz.) can kidney beans, drained
  • 1 cup chopped onions
  • 1 Tbsp. ground cumin
  • 1 Tbsp. salt
  • 1 (15 oz.) can tomato sauce
  • 3 Tbsp. water
  • cayenne pepper to taste

Instructions

  1. In a 4 to 5-quart Dutch oven, brown the ground beef.
  2. Add chopped onions and crushed garlic; cook until onions are transparent.
  3. Add oregano, salt, canned tomatoes, tomato sauce, and chili powder.
  4. Simmer about 1 hour, stirring occasionally.
  5. Blend flour and water to create a slurry and add to the mixture. Stir well and cook for 20 minutes.
  6. Add drained kidney beans.
  7. Add cayenne pepper if hot chili is desired.
  8. Cook for an additional 10 minutes.
