A versatile fish marinade combining citrus, garlic, and herbs that enhances flavors, ideal for grilling, broiling, or baking fish for a light, flavorful meal.

Ingredients

  • 1/4 cup olive oil
  • juice of 1 lemon or lime (about 3 Tbsp.)
  • 1 clove garlic, crushed
  • pepper
  • finely chopped dill or parsley (optional)

Instructions

  1. Stir together olive oil, lemon or lime juice, crushed garlic, pepper, and chopped dill or parsley.
  2. Brush the marinade on both sides of the fish steaks or pour over to marinate.
  3. Let sit on the fish for 30 minutes at room temperature or refrigerate up to 2 hours.
  4. Grill or broil the fish for 4 to 5 minutes on each side, or bake in a 350°F oven for 20 minutes until the fish easily flakes with a fork.
