Ingredients

  • 1 cup all-purpose flour
  • 2 teaspoons baking powder
  • 1 tablespoon granulated sugar
  • 2 eggs, separated
  • 1/2 teaspoon salt
  • 3/4 cup milk
  • 2 tablespoons melted butter

Instructions

  1. In a large bowl, whisk together the flour, baking powder, sugar, and salt.
  2. In a separate bowl, beat the egg yolks and then stir in the milk and melted butter.
  3. Pour the wet ingredients into the dry ingredients and gently mix until just combined.
  4. In another bowl, beat the egg whites until stiff peaks form.
  5. Gently fold the egg whites into the batter until incorporated, being careful not to deflate the whites.
  6. Heat a griddle or non-stick skillet over medium heat and lightly grease.
  7. Pour 1/4 cup of batter onto the hot surface for each pancake.
  8. Cook until bubbles form on the surface and the edges look set, about 2-3 minutes.
  9. Flip and cook for another 2 minutes until golden brown and cooked through.
  10. Serve warm with your favorite toppings.
