Ingredients

  • 2 to 2 1/2 lb. ground beef or combination of beef and ground turkey
  • 3 Tbsp. olive oil
  • 1 large or 2 small onions, diced
  • 2 stalks celery with nice tops, chopped fine
  • 3 cloves garlic, minced
  • 1/4 cup chopped, fresh parsley
  • 1 can mushrooms, chopped
  • 1 large can stewed tomatoes
  • 2 small cans tomato paste
  • 2 Tbsp. mixed pickling spice
  • 2 bay leaves
  • 1 Tbsp. oregano

Instructions

  1. Brown the meat in olive oil, stirring as it browns.
  2. Add onions when almost done and stir, browning a little.
  3. Put spices in a small pan of water and keep simmering.
  4. Combine meat and onions with the rest of the ingredients and cook on low heat for at least an hour.
  5. Add the spice water as needed using a tea strainer.
  6. This sauce may be frozen in pint containers and used as needed.
  7. Serve over spaghetti with a sprinkle of Parmesan cheese.
