- Heat oven to 350°F.
- Spray a 13 x 9-inch cake pan with non-stick spray.
- Heat the evaporated skim milk in a medium saucepan until barely simmering.
- Remove from heat and whisk in cocoa powder until thickened and almost smooth.
- Let stand for 2 to 3 minutes to cool.
- Whisk in applesauce and vanilla extract.
- In a large bowl, combine flour, 1 1/4 cups of sugar, baking powder, baking soda, and salt.
- In a medium bowl, beat egg whites with a mixer on high until thick and foamy.
- Gradually add the remaining 1/4 cup of sugar and beat until stiff peaks form.
- Pour the cooled cocoa mixture over the flour mixture and stir just until blended.
- Gently fold in about 1/4 of the beaten egg whites into the flour mixture.
- Fold in the remaining egg whites until no white streaks remain.
- Pour the batter into the prepared pan.
- Bake for 25 to 30 minutes until a toothpick inserted in the center comes out clean.
