Ingredients

  • 1 cup evaporated skim milk
  • 3/4 cup unsweetened cocoa powder
  • 1 cup unsweetened applesauce
  • 1 tablespoon vanilla extract
  • 2 cups all-purpose flour
  • 1 1/2 cups granulated sugar
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • whites from 4 large eggs

Instructions

  1. Heat oven to 350°F.
  2. Spray a 13 x 9-inch cake pan with non-stick spray.
  3. Heat the evaporated skim milk in a medium saucepan until barely simmering.
  4. Remove from heat and whisk in cocoa powder until thickened and almost smooth.
  5. Let stand for 2 to 3 minutes to cool.
  6. Whisk in applesauce and vanilla extract.
  7. In a large bowl, combine flour, 1 1/4 cups of sugar, baking powder, baking soda, and salt.
  8. In a medium bowl, beat egg whites with a mixer on high until thick and foamy.
  9. Gradually add the remaining 1/4 cup of sugar and beat until stiff peaks form.
  10. Pour the cooled cocoa mixture over the flour mixture and stir just until blended.
  11. Gently fold in about 1/4 of the beaten egg whites into the flour mixture.
  12. Fold in the remaining egg whites until no white streaks remain.
  13. Pour the batter into the prepared pan.
  14. Bake for 25 to 30 minutes until a toothpick inserted in the center comes out clean.
