Ingredients

  • 2 cups carrots, sliced
  • 2 eggs
  • 1 1/2 cups milk
  • 1/2 teaspoon salt
  • 4 tablespoons butter or margarine, melted
  • 1 teaspoon sugar
  • 1 cup sharp cheese
  • 1 cup bread crumbs
  • paprika (optional)

Instructions

  1. Cook and mash the carrots.
  2. Beat the eggs and mix together with the milk, salt, melted butter, and sugar.
  3. Grate the cheese and add it to the mixture along with the bread crumbs.
  4. Pour the mixture into a greased 1 1/2-quart casserole.
  5. Bake in a 350°F oven for about 30 minutes until set and golden.
