Ingredients

  • 1 pkg. active dry yeast
  • 1/4 c. warm water
  • 1 tsp. sugar
  • 1 c. scalded milk
  • 1/4 c. liquid oil (shortening)
  • 1 tsp. salt
  • 3 1/2 c. sifted all-purpose flour
  • 1 egg (optional)

Instructions

  1. Place yeast, 1 teaspoon sugar, and 1/4 cup warm water in a small bowl. Set aside.
  2. Combine milk, 1/4 cup sugar, shortening, and salt in a saucepan and heat to just below a boil. Cool to lukewarm.
  3. Add 1 1/2 cups flour to the cooled mixture and stir well.
  4. Add egg (if using) and yeast mixture; blend well.
  5. Gradually sift in another 2 cups of flour until the batter begins to loosen from the sides of the bowl and follows the spoon around.
  6. Turn dough out onto a well-floured surface and knead.
  7. Place dough in a well-oiled bowl and let it rise in a warm place until it doubles in size.
  8. Turn the dough out onto a floured surface again.
  9. Knead the dough, shape into biscuits or a loaf, and let it rise again until doubled in size.
  10. Bake at 350° to 400°, depending on thickness, until golden brown.
