Basic Yeast Dough

- Place yeast, 1 teaspoon sugar, and 1/4 cup warm water in a small bowl. Set aside.
- Combine milk, 1/4 cup sugar, shortening, and salt in a saucepan and heat to just below a boil. Cool to lukewarm.
- Add 1 1/2 cups flour to the cooled mixture and stir well.
- Add egg (if using) and yeast mixture; blend well.
- Gradually sift in another 2 cups of flour until the batter begins to loosen from the sides of the bowl and follows the spoon around.
- Turn dough out onto a well-floured surface and knead.
- Place dough in a well-oiled bowl and let it rise in a warm place until it doubles in size.
- Turn the dough out onto a floured surface again.
- Knead the dough, shape into biscuits or a loaf, and let it rise again until doubled in size.
- Bake at 350° to 400°, depending on thickness, until golden brown.
