Ingredients

  • 1 lb. dates, chopped
  • 1 heaping qt. pecans, whole
  • 1/2 lb. butter, melted
  • 1 c. flour
  • 1 tsp. baking powder
  • 1/8 tsp. salt
  • 1 c. sugar
  • 4 eggs, separated
  • 1 tsp. vanilla

Instructions

  1. Sift flour, baking powder, salt, and sugar together.
  2. Pour the sifted mixture over the chopped dates and pecans.
  3. Mix the ingredients thoroughly.
  4. Melt the butter and let it cool.
  5. Beat the egg yolks and mix them with the cooled melted butter.
  6. Pour the egg and butter mixture over the flour, dates, and nuts.
  7. Mix well to combine.
  8. Beat the egg whites until stiff peaks form.
  9. Gently fold the beaten egg whites into the batter.
  10. Pour the batter into a tube pan sprayed with Pam.
  11. Bake in a preheated oven at 325°F for 55 minutes.
