Ingredients

  • 1 Tbsp. olive oil
  • 3 cloves garlic, minced
  • 2 whole skinless, boneless chicken breasts, cut into 1-inch chunks
  • 1 medium zucchini, cut into chunks
  • 2 medium fresh tomatoes, cut into chunks
  • 1 Tbsp. dried basil
  • 2 Tbsp. vinegar
  • 1/4 tsp. pepper
  • cooked rice or pasta

Instructions

  1. Heat oil in a skillet; sauté garlic until fragrant.
  2. Add chicken and cook until no longer pink; remove and keep warm.
  3. Combine remaining ingredients, except rice or pasta.
  4. Toss to coat vegetables well. Add to skillet and stir-fry about 3 to 5 minutes.
  5. Return chicken to the skillet and heat thoroughly.
  6. Serve over cooked rice or pasta.
