Ingredients

  • 1 cup self-rising flour
  • 2 tablespoons cornmeal
  • 1/2 teaspoon seasoned salt
  • dash of pepper
  • 1 egg, beaten
  • 3/4 to 1 cup water or milk
  • 1 pound fresh vegetables
  • vegetable oil for frying

Instructions

  1. Combine all dry ingredients in a medium bowl; stir to mix.
  2. Add beaten egg and enough water or milk to make the batter the consistency of pancake batter.
  3. Dip fresh vegetables into the batter, coating evenly.
  4. Heat vegetable oil in a deep frying pan or wok.
  5. Fry the battered vegetables until golden brown and crispy.
  6. Drain on paper towels and serve hot.
