Ingredients

  • 3 c. dried beans
  • 1 large chopped onion
  • 1 large can crushed or stewed tomatoes
  • 1 tsp. chili powder
  • 1 Tbsp. lemon juice
  • 3 garlic pods, diced
  • salt and pepper to taste
  • 1/2 c. ham stock
  • 1 c. bite size ham pieces

Instructions

  1. Soak the dried beans in water overnight or for at least 8 hours, then drain.
  2. In a large pot, sauté the diced garlic and chopped onion until fragrant and translucent.
  3. Add the soaked beans, crushed or stewed tomatoes, ham stock, chili powder, salt, and pepper to the pot.
  4. Bring to a boil, then reduce heat and simmer uncovered for about 1 hour or until beans are tender.
  5. Stir in the bite-sized ham pieces and lemon juice, and cook for an additional 10 minutes.
  6. Adjust seasoning as needed and serve hot.
