Ingredients

  • 1 1/2 lb. ground beef
  • 1 c. soft bread crumbs
  • 1 egg, beaten
  • 1/2 c. chopped onion
  • 1/3 c. ketchup
  • 1 tsp. salt
  • 1/8 tsp. pepper
  • 4 c. mashed potatoes

Instructions

  1. Mix all ingredients except potatoes and pat into a 3-quart casserole dish.
  2. Bake, uncovered, at 350°F for 30 minutes.
  3. Remove from oven and drain off fat.
  4. Combine 4 cups hot mashed potatoes with 3/4 cup Cheddar cheese.
  5. Spread the mashed potato mixture over the cooked meat.
  6. Top with 1/4 cup cheese.
  7. Bake for an additional 20 minutes.
  8. Let cool for 5 minutes, then cut into squares and serve.
